- Solera is a 2 year blend of 100% wild, foraged apples. The fruit was picked in 2020, and 2021. In 2020, we set aside a single barrel of foraged cider to age alongside our native yeast. One year later, we blended it with a still fermenting, young foraged cider from 2021 (as a pét nat). It's a unique, tangible representation of two full years of our lives.
